宫廷饮食清代饮食文化的最高社会层面,同时也是既往中国四千年国家宫廷饮食文化发展的典型代表,这种属性在慈禧太后时代得到了集中体现。文章以《御茶膳房》档案为基本文献探讨了清宫膳食制度、清宫御膳演变、康熙与乾隆的清宫食制改革、慈禧太后时代"添安"筵式及其制度化、"添安"筵式与慈禧太后时代的官场酬酢风尚、晚清上层社会食尚风气、"添安"筵式与"满汉全席"关系、清宫御膳的社会历史意义等问题,对清代宫廷饮食文化、满汉文化融汇、社会风气演变等提出看法。
Abstract：The royal dietary system was the top level of the dietary culture in the Qing Dynasty, and the typical representation of the royal dietary culture in Chinese aulic culture of four thousand years. It was embodied extremely in the age of Empress Cixi. Based on the archives of Yu Cha Shan Fang, this paper discusses the royal dietary system, the evolvement of the royal dietary system, the reform of the royal dietary ceremony in the age of Emperor Kangxi and Qianlong, the Tian’an banquet and turning into system in the age of Empress Cixi, the relations of Tian’an banquet and Man-han banquet, as well as to the influence on the officialdom and the dietary culture of all the society in the Qing Dynasty. And the paper puts forward original views on the construction of political culture, the harmony of Man and Han culture, the evolvement of social habits and ways in the Qing Dynasty.
